Black Bean Burgers

Ingredients
- Servings: 4
- 1 (15 ounce) can black beans
- 1/4 cup onion, finely chopped
- 1/3 cup whole kernel corn
- 1/4 cup thick & chunky salsa
- 1 garlic clove (pressed)
- 2 tablespoons parsley or 2 tablespoons cilantro
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 cup unseasoned breadcrumbs
- 2 egg whites
- 4 hamburger buns
Recipe
- 1 rinse black beans and mash.
- 2 add onion, corn, salsa, garlic, parsley or cilantro, salt and pepper & mix well.
- 3 add bread crumbs and egg whites, mix well.
- 4 form into 4 patties.
- 5 cook over medium heat in a little olive oil for 6-8 minutes.
