Cheesy Hamburger Soup - Ww

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 2 medium garlic cloves, minced
  • 1 medium onion, diced
  • 1 -2 stalk celery, thinly sliced
  • 8 ounces lean ground beef (with 7% fat)
  • 3 cups fat free chicken broth, divided
  • 1 cup fat-free evaporated milk
  • 4 ounces velveeta reduced fat cheese product, cubed
  • 1/2 teaspoon paprika
  • 1/8 teaspoon black pepper

Recipe

  • 1 spray saucepan with cooking spray and place over medium-high heat. combine onion, celery, garlic and ground beef in saucepan. cook until beef is browned. drain if necessary.
  • 2 add 1/2-1 cup chicken broth and bring to a slow boil. cover and reduce heat to low until onion and celery are tender, stirring occasionally and adding additional broth if necessary - about 10-15 minutes.
  • 3 once onion and celery are tender, add remaining chicken broth and heat until just boiling.
  • 4 reduce heat to medium-low, add evaporated milk and cubed reduced fat velveeta cheese stirring continuously until milk is heated through and velveeta is melted.
  • 5 stir is paprika and black pepper.
