Easy Enchiladas For Picky Eaters

- 1 lb ground beef or 1 store bought cooked chicken
- 1 teaspoon garlic powder if using beef
- 2 (10 ounce) cans of kroger enchilada sauce
- 12 flour tortillas, i buy mission tortillas caseras
- 1 (10 ounce) package of frozen steamfresh rice
- 1 (8 ounce) package colby-monterey jack cheese
- sour cream, for serving
Recipe
- 1 preheat oven to 350°f.
- 2 brown the hamburger with garlic powder or debone and shred chicken. drain grease.
- 3 microwave rice for 4 minutes as package directs.
- 4 add rice and one can of enchilada sauce to the meat. mix together.
- 5 grease a 9x13 pan with cooking spray and add enchilada sauce from the second can just so it's covered.
- 6 assemble enchiladas by putting a couple spoonfuls of the mixture on a tortilla, then rolling it up. lay in greased pan side by side. i use as many tortillas as i need for the whole bowl of mixture. usually 8-12 tortillas.
- 7 pour remaining enchilada sauce over the top of the enchiladas and spread with a spoon in order to cover them all up with sauce.
- 8 add shredded cheese on top and bake for about 20 minutes or until cheese melts.
- 9 serve with sour cream.
