Enchiladas Acapulco

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 lb hamburger
  • 1 (16 ounce) can tomato sauce
  • 1/3 cup chopped green pepper
  • 1/2 cup chopped onion
  • 1 (8 3/4 ounce) can mexican chili beans
  • 1/2 lb velveeta mexican cheese
  • 8 6-inch flour tortillas

Recipe

  • 1 brown meat.
  • 2 drain.
  • 3 add 1/2 tomato sauce, onion and pepper.
  • 4 cook over meduim heat 5 minutes.
  • 5 add beans and 1/4 lb.
  • 6 mexican velveeta cheese.
  • 7 continue cooking until cheese melts.
  • 8 fill each tortilla with 1/4 cup meat mixture.
  • 9 roll up and place seam down in 12x8 greased baking dish.
  • 10 top with remaining meat mixture and tomato sauce.
  • 11 bake at 350 degrees covered for 20 minutes.
  • 12 top with remaining cheese.
  • 13 continue baking uncovered 5-8 minutes until cheese is melted.
