Ingredients

- 1 lb lean ground beef
- 1/4 cup breadcrumbs
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt, divided
- 1 egg
- 2 teaspoons vegetable oil
- 14 1/2 ounces chicken broth
- 1/4 cup water
- 1/4 cup ketchup
- 8 ounces wide egg noodles
- 1/2 cup nonfat sour cream
- 1 cup low-fat cheddar cheese
Recipe
- 1 combine ground beef, breadcrumbs, onion powder, 1/4 teaspoons salt, and egg; mix well.
- 2 shape into 3 dozen 3/4-inch meatballs.
- 3 heat oil in a large skillet. add meatballs and cook until browned on all sides. drain well.
- 4 combine chicken broth, water, ketchup, and remaining 1/4 teaspoons salt; add to skillet.
- 5 bring to a boil, stir in noodles, making sure they are covered by liquid.
- 6 reduce heat; cover and simmer 10 to 15 minutes or until noodles are tender.
- 7 stir in sour cream and cheese. cook until heated through and mixture thickens, about 5 minutes. do not boil.
