Chickpea Burgers

Ingredients

- 1 tablespoon vegetable oil
- 1 medium yellow onion, chopped
- 1 garlic clove, minced
- 1 (15 ounce) can chickpeas
- 1/2 cup walnuts
- 1/2 cup rolled oats (not instant or quick-cooking oats)
- 1 large egg
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground cumin
- 1/4 teaspoon smoked paprika
- 1 teaspoon salt
- ground black pepper
- 1 tablespoon olive oil
Recipe
- 1 in skillet over medium heat, cook onion and garlic in oil until softened and very lightly browned. pour contents of skillet into food processor fitted with the chopping blade.
- 2 add chickpeas, nuts, oats, egg, and spices. pulse until grainy but well-combined.
- 3 shape mixture into 4 patties. refrigerate for about an hour.
- 4 when ready to cook, heat olive oil in large skillet over medium heat and fry patties until darkly browned, even a little crunchy, turning once. dress with your favorite condiments and fixings.
- 5 burgers can be refrigerated for a day or so and crisped again in a skillet with a little oil.
