Chickpea Burgers

Ingredients

  • Servings: 4
  • 1 tablespoon vegetable oil
  • 1 medium yellow onion, chopped
  • 1 garlic clove, minced
  • 1 (15 ounce) can chickpeas
  • 1/2 cup walnuts
  • 1/2 cup rolled oats (not instant or quick-cooking oats)
  • 1 large egg
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika
  • 1 teaspoon salt
  • ground black pepper
  • 1 tablespoon olive oil

Recipe

  • 1 in skillet over medium heat, cook onion and garlic in oil until softened and very lightly browned. pour contents of skillet into food processor fitted with the chopping blade.
  • 2 add chickpeas, nuts, oats, egg, and spices. pulse until grainy but well-combined.
  • 3 shape mixture into 4 patties. refrigerate for about an hour.
  • 4 when ready to cook, heat olive oil in large skillet over medium heat and fry patties until darkly browned, even a little crunchy, turning once. dress with your favorite condiments and fixings.
  • 5 burgers can be refrigerated for a day or so and crisped again in a skillet with a little oil.
