Italian Stuffed Burger W/ Roasted Garlic Aioli & Roasted Red

Ingredients
- 10 ounces ground beef brisket
- 2 pieces sopressata
- 2 pieces mortadella
- 2 ounces fresh mozzarella cheese
- 1 1/2 ounces smoked provolone cheese
- 1 sweet gherkin
- 1 roasted red pepper
- 1 roma tomato
- 2 egg yolks
- 1/2 ounce chives
- 1 ounce roasted garlic
- 1/2 teaspoon salt
- 1/2 teaspoon fresh cracked black pepper
- 1 tablespoon crushed red pepper flakes
- 1 ounce olive oil, 2 pieces of foccacia
Recipe
- 1 mix brisket with crushed red pepper.
- 2 flatten half of brisket and flatten to 5-inch round.
- 3 place soprasetta on brisket and top with mozzarella, provolone and mortadella.
- 4 flatten the other half of the brisket to 4-1/2 inch round and place on top of the italian meats.
- 5 fold extra meat of bottom brisket over top of upper brisket and seal.
- 6 dice sweet gherkins, roasted red peppers and roma tomatoes and combine to make relish.
- 7 dice chives, whisk egg yolks and slowly add olive oil to form aioli. when medium peaks begin to form, add salt and pepper, chives and roasted garlic.
- 8 toast foccacia and cook to desired doneness.
