Deer-potato-tomato Casserole

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 1 1/2 lbs ground deer meat
  • 1 medium onion (coarse chop)
  • 2 teaspoons dried basil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 large unpeeled potatoes, thickly sliced
  • 6 large tomatoes, peeled and chopped or 1 (28 ounce) can chopped tomatoes
  • 4 ounces shredded cheddar cheese

Recipe

  • 1 cook deer burger, onion, basil, salt and pepper together until deer is done and lost its color.
  • 2 meanwhile, parboil potatoes until just tender.
  • 3 put deer burger in a deep 7 1/2 x 7 1/2-inch casserole and stir in potatoes and tomatoes (if canned tomatoes are used, do not drain).
  • 4 bake, uncovered, in a 350 degree oven for 30 minutes.
  • 5 top with cheese and bake 15 minutes longer.
