Curry Sandwich

Ingredients

  • 1 cup garbanzo beans
  • 20 leaves spinach
  • 3 slices marinated tofu (trader joes teriyaki is excellent)
  • 2 teaspoons raisins
  • 2 teaspoons diced jicama
  • 1 teaspoon dried diced pineapple
  • 2 hamburger buns or 2 wraps, in 2 lavash
  • curry sauce
  • 1 teaspoon curry powder
  • 1/4 cup cashews
  • 1 1/2 teaspoons agave or 1 1/2 teaspoons maple syrup
  • 1/4 teaspoon sea salt
  • 1/4 cup water

Recipe

  • 1 combine ingredients for curry sauce in a blender. blend until smooth.
  • 2 puree garbanzo with 1/2 of curry sauce. warm finished mixture then mix in raisins, jicama, and pineapple.
  • 3 toast buns or lavash. liberally cover bun or lavash with curry sauce. layer spinach, garbanzo mix, and tofu.
