Hamburger Chowder

Total Time: 1 hr 40 mins Preparation Time: 25 mins Cook Time: 1 hr 15 mins

Ingredients

  • Servings: 6
  • 1 lb lean ground beef
  • 1 (28 ounce) can tomatoes, undrained, broken up
  • 2 carrots, peeled and diced
  • 1 stalk celery, diced
  • 1 onion, chopped
  • 1/2 cup barley (not quick cooking)
  • 8 cups water
  • 1 1/2 teaspoons salt
  • 1/2-3/4 teaspoon pepper
  • 2 medium potatoes, peeled and diced
  • 1 cup frozen corn
  • 1 cup frozen green beans

Recipe

  • 1 brown ground beef. drain.
  • 2 add tomatoes with juice (break up with spatula), carrots, celery, onion, barley, water, salt and pepper.
  • 3 heat to boiling. reduce heat to low. cover and simmer 30 minutes.
  • 4 add potatoes, corn and green beans.
  • 5 cover and simmer 45 minutes longer.
  • 6 more water can be added if necessary.
