Cheesy Low-carb Eggplant Parmesan

Total Time: 1 hr 10 mins Preparation Time: 30 mins Cook Time: 40 mins

Ingredients

  • 2 eggplants
  • 1 (26 ounce) jar spaghetti sauce
  • 2 cups mozzarella cheese, shredded
  • 1 (2 cup) container low-fat ricotta cheese
  • 1 lb hamburger
  • 1 cup parmesan cheese
  • 1 -2 egg
  • italian spices
  • salt and pepper

Recipe

  • 1 preheat oven to 425°f spray two cookie sheets with non-stick spray.
  • 2 in one bowl, beat the egg(s) until well incorporated. in another bowl, put your parmesan cheese along with any italian seasonings you like, and salt and pepper.
  • 3 slice eggplants into 1/2 inch slices. dip each slice in the egg, then into the parmesan cheese until covered. place on cookie sheet.
  • 4 cook at 425 for 20 minutes, turning the eggplant slices half way through.
  • 5 meanwhile, brown the hamburger.
  • 6 lower the oven temperature to 350°f once the eggplant slices have finished cooking.
  • 7 spray a 9x13 pan with cooking spray. put a small amount of spaghetti sauce on the bottom, then layer half the eggplant slices on the bottom.
  • 8 top the first layer of slices with half (or a little less) of remaining tomato sauce, then spread the ricotta evenly over the tomato sauce.
  • 9 spread the hamburger evenly over the ricotta.
  • 10 use the remaining eggplant slices to layer over the hamburger. cover with remaining tomato sauce, then the mozzarella cheese.
  • 11 bake at 350°f for 20 minutes, then let sit for 5 minutes before serving. enjoy!

Easy Hamburger Macaroni Casserole

Ingredients

  • Servings: 6
  • 1 box kraft macaroni and cheese
  • 1 (10 ounce) can cream of mushroom soup
  • 1 lb ground beef
  • 1 (4 ounce) can mushrooms
  • 1/4 chopped onion (optional)
  • salt (to taste)
  • pepper (to taste)
  • milk (1 soup can full)

Recipe

  • 1 prepare macaroni and cheese as directed.
  • 2 brown ground beef and onions, drain after cooking.
  • 3 in casserole dish, combine ground beef, onions, mushrooms, cream of mushroom soup, and 1 can of milk.
  • 4 stir until blended.
  • 5 add macaroni and cheese and stir until blended.
  • 6 add salt and pepper to taste.
  • 7 bake at 350 degrees for 30 to 45 minutes.

Easy Hamburger Vegetable Soup

  • 1 lb ground beef
  • 1 large onion, chopped
  • 3 (15 ounce) cans mixed vegetables
  • 3 (15 ounce) cans diced tomatoes
  • 1 (6 ounce) can tomato sauce
  • 2 cups water or 2 cups beef broth
  • salt & pepper

Recipe

  • 1 brown ground beef and onion in large pot.
  • 2 add remaining ingredients.
  • 3 bring to a boil, then simmer 3-4 hours or in a crockpot on low all day.

Chow Mein Hotdish

Ingredients

  • 2 lbs hamburger, cooked and drained
  • 3 cups rice, cooked
  • 2 (10 1/2 ounce) cans fat-free cream of chicken soup (condensed, don't add milk or water)
  • 3 cups chow mein noodles
  • 2 tablespoons light soy sauce
  • 1/4 cup water

Recipe

  • 1 combine all ingredients in a large bowl.
  • 2 add the small amount of water.
  • 3 transfer to a 9x13 pan.
  • 4 bake at 350 degrees for 30-45 minutes, until heated through.

A-1 Bacon Onion Burgers

  • 1 lb lean ground beef
  • 1/2 medium onion, minced
  • 1 egg
  • 1/2 cup oatmeal
  • 1/4 cup bacon bits
  • 1/4 cup a.1. original sauce

  • 1 place ground beef in a medium mixing bowl.
  • 2 in a small skillet, saute onion until slightly carmelized.

Black And Blue Veggie Burgers

Ingredients

  • 1/4 cup yogurt
  • 1/4 cup sour cream
  • 1/4 cup cilantro leaf, minced
  • salt, to taste
  • 1 teaspoon lime juice
  • 2 (15 ounce) cans refried black beans (or use up your leftover black beans!)
  • 1 small onion, minced
  • 1/2 teaspoon cumin seed, crushed
  • 1 1/2 teaspoons achiote powder
  • 1/4 teaspoon ground cinnamon
  • 1 garlic clove, finely minced
  • 2 tablespoons blue cornmeal or 2 tablespoons yellow cornmeal
  • 1/2 jalapeno, finely minced
  • 1 -2 radish, minced
  • 1/2 lime, juice of
  • 1 tablespoon fresh cilantro, finely minced
  • 2 tablespoons tomato paste or 2 tablespoons tomato ketchup
  • 1 tablespoon rice wine vinegar
  • 1/4 cup red bell pepper, diced very small
  • 1/4 teaspoon mexican oregano
  • 1 egg, slightly beaten
  • 1/3 teaspoon salt, to taste
  • black pepper, to taste
  • 1 teaspoon olive oil, for frying

Recipe

  • 1 prepare cilantro cream by combing ingredients and set aside.
  • 2 place the refried black beans in a large mixing bowl.
  • 3 in a small saute pan, heat up a little bit of oil and saute the onion, cumin seeds and achiote together for about 2 minutes or until the onion just starts to soften. add the garlic and saute another 30 seconds.
  • 4 whirl the cornmeal in a mini-blender or coffee mill to a fine powder.
  • 5 in the large bowl with the beans, add all the ingredients, including the onion mixture and mix well. let set for about 20 minutes to allow the cornmeal to soften and absorb. (bean mixture can be prepared ahead of time and refrigerated.).
  • 6 oil your hands and form the mixture into six patties or twelve mini-patties.
  • 7 stove top directions: heat some olive oil in large saute pan on medium-high heat. fry the patties for about 5 minutes, flip over and fry another 5 minutes.
  • 8 oven directions: form the patties and place on a greased cookie sheet. bake at 375 degrees for about 15-20 minutes or until sizzling and lightly crisp on top.
  • 9 serve warm on whole grain burger buns with your favorite burger toppings.

Gourmet Green Chile Burgers

  • 1 hamburger patty
  • 1/4 cup pepper jack cheese
  • 1/2 cup green chile
  • 1 bun

Recipe
