Blue Ribbon Burgers

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 2 lbs lean ground beef
  • 2 teaspoons worcestershire sauce
  • 1/2 teaspoon salt
  • 2 cloves garlic, peeled &,srushed
  • 1/3 teaspoon pepper
  • 3 ounces cream cheese
  • 3 tablespoons blue cheese, crumbled
  • 8 medium fresh mushrooms, sliced quite thin

Recipe

  • 1 mix the meat, worcestershire sauce, garlic, salt& pepper.
  • 2 shape the meat into 12 thin patties apprx 4 1/2" across.
  • 3 mix the cream cheese& blue cheese.
  • 4 top 6 of the patties with the cheese mixture and spread evenly to within 1/2" of the edges press the mushroom slices into the cheese mixture.
  • 5 cover each pattie with one of the remaining patties, seal the edges well, don't have any peek holes fry the patties or bbq 4" from heat (iprefer frying them- fry one side on high until well browned flip turn heat to medium low cover with a lid and continue cooking for apprx 12 minutes) if you are bbqing cook one side flip and contiue cooking total time 10-15 minutes.

Barbequed Cheddar Burgers

  • 1/2 teaspoon garlic powder

Recipe

  • 1 mix first 5 ingredients and form into patties. cook by preferred method and melt cheddar cheese on top.

Baked Veggie Fritters / Burgers (healthy)

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 8 fine green beans
  • 3 button mushrooms
  • 1/2 medium onion
  • 60 g halloumi cheese
  • 1 large carrot
  • 4 tablespoons cornmeal
  • 1 medium egg
  • 3 tablespoons lemon juice
  • 3 tablespoons milk
  • 1 teaspoon hot chili powder
  • 1 teaspoon honey
  • salt & pepper (to season)

Recipe

  • 1 pre-heat your oven to 180c.
  • 2 chop the first four ingredients up into small cubes (as small as you can be bothered) and grate the carrot.
  • 3 place in a good-sized mixing bowl along with all the remaining ingredients and mix well.
  • 4 if your mixture is a little runny then add some more cornmeal to bring it together.
  • 5 grease a baking tray with 1-cal spray and spoon the mixture on to form 4 good-sized patties.
  • 6 bake for around 30 mins or until nicely browned, turning half-way if you wish.
  • 7 serve hot or cold.

Chili Burgers

Ingredients

  • 1/2 cup bacon, diced
  • 1/4 cup onion, chopped
  • 1/4 cup celery, chopped
  • 1/3 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon nutmeg
  • 1 teaspoon chili powder
  • 1/2 lb ground beef
  • 15 ounces red kidney beans (1 can)
  • 30 ounces tomatoes (large can)

Recipe

  • 1 cook bacon in a skillet until brown and crisp. add onions and celery. let simmer about 5 minutes.
  • 2 combine seasonings with ground meat and add to vegetables. cook until slightly brown. add beans and tomatoes. simmer for about 30 minutes, stirring occasionally.
  • 3 serve hot on hard rolls.

Hawaii Da Kine Burgers W/ Sweet-chili Glaze & Goat Cheese

Ingredients

  • 4 ounces goat cheese, surfing goat dairy rolling green goat cheese (made with fresh garlic chives) or 4 ounces other garlic-flavored mild goat cheese
  • 1/2 cup mayonnaise
  • 2 1/2 tablespoons ginger, finely minced fresh
  • 3 ounces sausage, spicy hawaiian portuguese (or other portuguese sausage, such as linguica)
  • 2 lbs ground chuck
  • 1/3 cup papaya, minced ripe
  • 1/3 cup sweet onion
  • 5 teaspoons seasoning, mccormicks gourmet collection asian-style spiced sea salt (or 1 1/2 teaspoons coarse sea salt)
  • 2/3 cup thai sweet chili sauce
  • 2 1/2 tablespoons japanese shoyu, preferably yamasa brand (soy sauce)
  • 3 tablespoons macadamia nut oil or 3 tablespoons peanut oil
  • 2 small hass avocadoes, pitted, peeled, and thinly sliced lengthwise
  • 1 1/2 tablespoons fresh lemon juice, preferably meyer variety
  • 1/2 papaya, coarsely chopped
  • 5 cups chopped watercress
  • 2 sweet onions, thinly sliced and separated into rings
  • 2 large garlic cloves, minced
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons japanese shoyu, preferably yamasa brand (soy sauce)
  • vegetable oil, for brushing on the grill rack
  • 6 hamburger buns (or sandwich rolls, high-quality seeded, split)

Recipe

  • 1 prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.
  • 2 to make the spread, combine the cheese, mayonnaise, and ginger in a small bowl. cover and set aside.
  • 3 to make the patties, place the sausage in a food processor and process until finely chopped. transfer to a large bowl and add the chuck, papaya, onion, and spiced salt. combine well, handling the meat as little as possible to avoid compacting it. form into 6 patties and refrigerate until ready to grill.
  • 4 to make the glaze, combine the sweet chili sauce and soy sauce in a small bowl. set aside.
  • 5 to make the salad, pour the oil into a fire-proof skillet and heat on the grill until it reaches its smoking point. while the oil is heating, halve the avocado slices and place in a large bowl. add the lemon juice and toss gently. layer the papaya, watercress, onions, garlic, and pepper flakes over the avocado and carefully drizzle the hot oil over the top. add the soy sauce and toss to combine.
  • 6 brush the grill rack with oil. place the patties on the rack, cover, and cook for 4 to 5 minutes per side, basting often with the glaze until the desired doneness is reached. during the last few minutes of cooking, place the buns cut sides down on the outer edges of the rack to toast lightly.
  • 7 to assemble the burgers, spread the goat cheese spread over the cut sides of the bun tops. place a patty on each bun bottom and top with equal portions of the salad. add the bun tops and devour.

Chili Burgers

Ingredients

  • Servings: 8
  • 2 lbs lean ground beef
  • 1 egg
  • 1/4 cup dry breadcrumbs
  • 1/2 teaspoon pepper
  • 1 teaspoon dry mustard
  • 1/4 minced fresh onion
  • 1 teaspoon salt
  • 1/3 cup chili sauce
  • 1 teaspoon prepared mustard
  • 2 teaspoons chili powder

Recipe

  • 1 combine first seven ingredients together in a bowl, and mix well.
  • 2 divide into 8 equal portions and shape each into a large flat patty.
  • 3 combine sauce ingredients together and set aside.
  • 4 place patties on broiling tray, broil 5-6 inches from heat source, leaving the door slightly ajar.
  • 5 when the first side is done (5-8 minutes), turn over and cook the second side, basting with sauce during the last 2 minutes.
  • 6 serve with warmed hamburger buns if desired.

Easy Veggie Lasagne

Ingredients

  • Servings: 12
  • 1 (9 ounce) box no-boil lasagna noodles, uncooked you'll use 12 sheets (i use barilla)
  • 2 eggs
  • 16 ounces large curd cottage cheese
  • 4 cups shredded mozzarella cheese (divided)
  • 8 ounces fresh mushrooms
  • 2 tablespoons butter
  • 1/2 teaspoon garlic salt
  • 1 teaspoon italian spices
  • 1/2 cup grated parmesan cheese
  • 8 ounces vegetarian ground beef (i use 2 of the three packets in the boca meatless ground burgers box)
  • 2 (26 ounce) jars pasta sauce

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 spray 13x9 pan with non-stick cooking spray.
  • 3 slice mushrooms thinly and cook until softened in butter, when they are almost complete add the frozen boca crumbles to the pan and cook until those are warmed throughout. pour the garlic salt over that and turn heat off.
  • 4 in a seperate bowl beat eggs, then add in the cottage cheese, 2 cups of the mozzarella, 1 tsp italian spices and the parmasan cheese.
  • 5 set aside 1.5 cups of pasta sauce. mix the remaining amount of sauce with the mushroom mixture.
  • 6 now assemble: as you do this slightly overlap the lasagne sheets and make sure you spread the fillings to the edges to seal in the pasta sheets. assemble in this order:.
  • 7 spread 1.5 cups of pasta sauce on the bottom of the pan.
  • 8 layer 4 uncooked lasagne sheets, 1/3 of the cottage cheese mixture, 1/3 of the mushroom mixture, 1 cup of mozzarella.
  • 9 layer 4 more uncooked sheets, 1/3 of the ricotta, 1/3 of the mushroom mixture.
  • 10 layer
  • 11 for the last layer you will layer 4 more uncooked lasagne sheets, the rest of the cottage cheese mixture, the rest of the mushroom mixture and end with the final cup of mozzarella.
  • 12 cover the pan with foil and back until bubbly around 60 minutes.
  • 13 uncover and continue cooking until cheese is melted about 5-10 minutes.
  • 14 let stand 15 minutes before cutting.

Jack's Tasty Tuna Burgers

  • 2 eggs (slightly beaten)

Jack Daniels Pulled Lamb

  • 1 yellow onion, chopped fine
  • 2 tablespoons garlic, chopped
  • 1 tablespoon tomato paste
  • 2 tablespoons dijon mustard
  • 1/4 cup vinegar
  • 1 teaspoon paprika
  • 1/3 cup ketchup
  • 2 teaspoons worcestershire sauce
  • 1/2 cup jack daniels whiskey
  • 1/4 cup light brown sugar
  • 1 teaspoon ground black pepper
  • 1 bay leaf
  • 3 lbs lamb shoulder
  • hamburger bun

Recipe

  • 1 mix the chopped yellow onion, chopped garlic, tomato paste, dijon mustard, vinegar, paprika, ketchup, worcestershire sauce, jack daniels, brown sugar, black pepper, and bay leaf together.
  • 2 put the lamb shoulder and sauce mixture in a large stock pot and cover with water. bring to a boil and reduce to a simmer. let the mixture simmer for two hours. you will know when it is done by the way the lamb pulls apart so easily.
  • 3 take the lamb out of the sauce a pull it apart. then take the jack daniels sauce in the pan and reduce it to 1/3 of it's original amount. mix the lamb and the sauce together.
  • 4 serve on hamburger buns.

Grilled Sam-burgers

Ingredients

  • Servings: 4
  • 1 -1 1/4 lb ground beef
  • 3 tablespoons steak sauce (such as a.1.)
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 garlic cloves, minced
  • 2 teaspoons minced fresh oregano (or 3/4 teaspoon dried)
  • 1 -2 tablespoon finely minced onion

Recipe

  • 1 combine all of the ingredients in a large mixing bowl, mixing thoroughly with your hands or a wooden spoon.
  • 2 shape into 4 patties by hand, making the center of each just a little thinner than the edges.
  • 3 refrigerate until ready to grill.
  • 4 start your grill, and when it's good and hot, grill the burgers to the desired doneness, flipping once.

Chili Burger Supper

  • 1 (14 ounce) can chili beans (i use mrs grimes or bush's)
  • 1 1/2 lbs lean ground beef (i use 93/7)
  • 1 (10 1/2 ounce) can tomato soup

Recipe

  • 1 cook macaroni until done: drain.
  • 2 brown ground beef in skillet.
  • 3 add the chili beans, tomato soup and macaroni.
  • 4 heat, stirring occasionally, for 5-7 minutes.

Beer Chili

Ingredients

  • 1 (12 ounce) can beer, of your choice
  • 1 (46 ounce) can v8 vegetable juice
  • 1 (8 ounce) can kidney beans (mild or hot)
  • 1 (8 ounce) can chili beans (mild or hot)
  • 1 (8 ounce) can diced tomatoes
  • 1 lb ground beef (browned and drained)
  • 1 medium chopped onion
  • 1 chopped green pepper (or desired amount) (optional)
  • 1 (8 ounce) package chili seasoning mix (caroll shelby's chili kit)
  • sour cream or shredded cheese or saltines or fritos corn chips

Recipe

  • 1 brown and drain 1 lb.of hamburger.
  • 2 while browning hamburger, empty v-8 juice and beer into a large stock pot, bring to a boil.
  • 3 reduce heat to a simmer; add all remaining ingredients, except chili package spices (add beef, beans, onion, green pepper, tomatoes etc.).
  • 4 open chili spice package. you will find 4 packets of different spices.
  • 5 add larger package of chili spices first and stir.
  • 6 add salt packet to taste (i usually end up adding all of this one); stir.

Grilled Shrimp Burgers With Mango Salsa

  • 1 mango, pitted, peeled and diced
  • 1 avocado, pitted, peeled and diced
  • 1 red bell pepper, diced
  • 2 tablespoons red onions, diced
  • 1 lime, juice only
  • 1 1/2 tablespoons cilantro, chopped
  • 1/4 teaspoon coarse salt (i used sea salt)
  • 1/4 teaspoon pepper
  • 2 slices bread, torn into pieces (i used whole wheat but the original recipe said bread)
  • 1 1/2 lbs shrimp, peeled and deveined
  • 2 tablespoons cilantro, chopped
  • 2 tablespoons chives, snipped
  • 1 garlic clove, pressed
  • 1/4 cup radish, diced
  • 1/4 cup celery, diced
  • 2 tablespoons light mayonnaise
  • 1 lemon, juice and zest
  • 3/4 teaspoon coarse salt
  • 1/2 teaspoon pepper
  • 4 whole wheat hamburger buns
  • 1 cup salad greens

Recipe

  • 1 to make the salsa: combine salsa ingredients in a bowl and put in refrigerator until needed.
  • 2 to make the burgers: puree bread in a food processor until crumbs and then place in a large bowl.
  • 3 to the processer put in the shrimp, cilantro, chives and garlic and process until finely chopped and forms a chunky paste (but not a puree) and then add to the bread crumbs along with the next 6 ingredients (radishes - pepper); stir to combine.
  • 4 make into 4 patties and refrigerate until ready to grill.
  • 5 prepare grill until medium hot.
  • 6 spray burgers with pam on both sides.
  • 7 grill burgers (4-5 minutes per side) to desired donesness. toast burger buns for last mnute or so of grilling if desired.
  • 8 on burger bun bottoms place salad greens, top with burger and then the salsa. serve with remaining salsa.

Baked Tuna Burger

Ingredients

  • 425 g tuna
  • 125 g ricotta cheese
  • 1 spring onion, chopped
  • 30 ml mayonnaise
  • 1 small lemon, juice of
  • pepper
  • salt
  • 6 hamburger buns (round)

Recipe

  • 1 in a large bowl, mix together tuna, ricotta cheese, spring onion, mayonnaise, lemon juice and season with pepper and salt.
  • 2 cut the hamburger buns in half, separating top from bottom. scoop out some of the bread from inside the buns (top and bottom) to make room for the tuna mixture.
  • 3 fill the buns with the tuna mixture and place both halves back together. wrap the bun in tin foil and place in a moderate oven (180 degrees celsius) for 15-20 minutes.
  • 4 to serve, cut the buns in half from the top.

Barbecued Worm Sandwiches (halloween Or Anytime!)

Ingredients

  • 8 hot dogs
  • 1/2 cup barbecue sauce
  • 8 slices american cheese
  • 8 hamburger buns (toasted if desired)

Recipe

  • 1 cut each hot dog in half lengthwise, then cut each half in thirds to make 6 strips.
  • 2 in 10-inch nonstick skillet, heat hot dog strips over medium-high heat until strips begin to curl. (strips will curl slightly when heated.).
  • 3 gently stir in barbecue sauce until hot dog strips are coated. heat until bubbly.
  • 4 place slices of cheese on bottom halves of buns. top with hot dog mixture, and cover with top halves of buns.

Farmer's Roast(vegan)

Ingredients

  • 1 medium onion, finely chopped
  • 1 1/2 cups fresh mushrooms, finely chopped
  • 3 tablespoons olive oil
  • 2 cups veggie burgers (i used veggie crumbles by morningstar)
  • 2 cups cooked brown rice
  • 1/2 cup quick oats
  • 2 cups seasoned breadcrumbs
  • 1/2 cup vegan mayonnaise
  • 1 teaspoon seasoned vegetable salt (i used italian seasoning and salt)
  • 1 tablespoon dried parsley (i used 3 tbls. fresh parsley)
  • 1 cup chopped walnuts
  • 1/2 cup soymilk
  • 1/2 cup whole wheat flour
  • 1/2 cup nutritional yeast
  • 1/3 cup oil
  • 2 1/2 cups cool water (may need a little more for desired consistancy)
  • 4 tablespoons soy sauce
  • salt

Recipe

  • 1 in a medium skillet over medium heat, saute onion and mushrooms in the oil until the onion is clear.
  • 2 in a large bowl, mix remaining ingredients(except gravy ingredients).
  • 3 spray a medium casserole dish with nonstick cooking spray and put in roast mixture.pat down. bake at 350*f. for 1 hour.
  • 4 serve with country gravy or desired sauce.

  • 6 in a medium skillet, brown flour, stirring constantly with a whisk until it becomes fragrant and slightly deeper in color. add the yeast flakes and oil and cook, stirring for just a minute more.
  • 7 add the water all at once, whisking fast and continuously until thickened. this will only take a minute or so.
  • 8 linda micheff says you can also make this roast into patties and either fry in a skillet or brown in oven.
  • 9 good served with mashed potatoes, corn on the cob and tomatoes and cucumbers.

Farmhouse Veggie Burger

Ingredients

  • 2 whole eggplants, peeled and 1 inch diced
  • 2 scallions, chopped
  • 1 tablespoon minced parsley
  • 1 cup shredded medium cheddar cheese
  • 1 cup breadcrumbs

Recipe

  • 1 sauté eggplant on low heat till grey and very soft.
  • 2 mix together eggplant and all the rest of the ingredients, except oil, let rest for ½ hour in refrigerator.
  • 3 form into 4 equal patties about an inch thick.
  • 4 in a sauté pan, heat olive oil until shimmering hot, fry each side of patty till dark brown, about 5 minutes each side.
  • 5 serve on locally made sandwich bun with caramelized onions, spicy brown mustard, roasted red peppers and salad mix.
  • 6 **notes: these are the exact directions from the restaurant website, and it's usually best to stick to the recipe on your first try. i have made these without peeling the eggplant and the peels don't hurt anything. i don't know if i always pick unusually big eggplants, but i get six burgers from this recipe instead of the four the restaurant states. i also now use an egg as the binding agent with half the amount of cheese, which i find holds the patties together a little better. they are smashing with a whole, canned poblano on top. enjoy!

Baked Vegetable Burgers

  • 1 tablespoon sesame oil
  • 1 garlic clove, minced
  • 2 carrots, grated
  • 1 small onion, diced fine
  • 2 green onions, chopped fine
  • 1/2 cup fresh spinach, chopped fine
  • 1 portabella mushroom, coarsely chopped
  • 2 cups cooked millet
  • 1 teaspoon sesame oil
  • 1/2 cup fresh whole wheat bread crumbs
  • 1 egg, beaten
  • 2 tablespoons toasted almonds, skins removed, chopped
  • kosher salt

  • 1 heat oven to 350 degrees.
  • 2 line cookie sheet with foil, lightly oil and set aside.
  • 3 in a large skillet heat sesame oil, add garlic through mushroom and saute lightly.
  • 4 in a large mixing bowl, by hand, combine the remaining ingredients. add the sauteed vegetables, mixing gently and completely ( mixture needs to be similar in consistency to meat hamburgers, if too dry: add egg beater brand egg substitute, if too wet: add more breadcrumbs to bind ). hand form into 4 - 6 burger size patties and place on cookie sheet.
  • 5 bake for approx 40 minutes or until golden. ovens vary, check after 30 minutes.
  • 6 serve on toasted hamburger buns with choice of trimmings/ condiments.

Fred's Favorite Meatloaf

  • 4 slices bread, torn into small bits
  • 2 medium eggs
  • 1 onion, finely chopped
  • 8 ounces tomato sauce
  • 1 teaspoon salt

Recipe

  • 1 in a large bowl, put the hamburger, bread, eggs, onion, tomato sauce, salt and pepper. using your hands, mix everything together. continue mixing until all of the ingredients are evenly distributed. take your time, and do it well. press this mixture into a 9- by 5-inch loaf pan, or another 2-quart size pan (like a casserole). pack it tightly and smooth it so it looks nice on top.bake at 350f for at least an hour. if the meat was cold from the fridge, bake for 1 1/2 hours. remove the meatloaf from the oven. let it rest for a few minutes to firm up. drain off the fat if desired.

Baked Veggie Burgers

  • 1 spray pan with cooking spray.

Blue Ribbon Shepherd's Pie

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 cover potato cubes with water in saucepan and simmer until tender. meanwhile, in large skillet, saute hamburger with onion until meat is browned and onion is translucent; drain. add soup, can of corn, drained, 1/2 tsp salt, 1/4 tsp pepper to meat mixture and mix well. pour into 2 quart casserole.
  • 3 drain potatoes, add butter, 1/2 tsp salt and 1/4 tsp pepper. mash while adding evaporated milk, a little at a time, until they are mashed and smooth (it may not take the whole can of milk).
  • 4 spread mashed potatoes over the top of the meat mixture, making sure to get all the way to the edges. sprinkle cheese over top. bake 30-40 minutes until hot and bubbly.

Hawaiian Grilled Hamburgers

  • 1 tablespoon oil (if you use turkey burger)

  • 1 1/2 teaspoons soy sauce
  • 1 tablespoon pineapple juice
  • 2 (12 ounce) cans pineapple slices in juice
  • 1 cup mayonnaise
  • 1 teaspoon celery seed
  • 2 teaspoons pineapple juice
  • 1 tablespoon ketchup
  • 8 slices provolone cheese
  • 8 romaine lettuce leaves
  • 8 hamburger buns
  • 1/2 cup margarine

Recipe

  • 1 open canned pineapple, drain juice and reserve amounts for recipe.
  • 2 in large mixing bowl, add egg, (oil if using turkey burger only) brown sugar, ginger, soy sauce, 1 tblsp pineapple juice. mix well. set aside.
  • 3 for dressing:.
  • 4 in small bowl mix mayonnaise, celery seed, pineapple juice, ketchup.taste. you may add a little more ketchup by tsp if you prefer. refrigerate.
  • 5 add ground meat to egg, brown sugar and spice mixture. mix well. i use my fingers.
  • 6 form into 8 patties.
  • 7 put on the grill and cook about 6 minutes, then flip until done.
  • 8 you may grill the pineapple rings on the grill for about 2 minutes.
  • 9 brush margarine on each side of buns.
  • 10 put on the grill the last two or three minutes to toast.
  • 11 to serve: place one slice cheese on bun, then cooked pattie, add a spoonful of sauce on top, then romaine lettuce leaf, then one pineapple ring, top with other half of bun.
  • 12 serve with taro chips, hawaiian potato chips, pastachio nuts, and fresh coconut slices if you have. dip the coconut slices in a mixture of vanilla and evaporated milk and splenda before serving.
  • 13 note: i have not used fresh pineapple because there is intense natural acid. some of the family cannot tolerate. you could substitute fresh pineapple, make sure you use some of the natural juice.

Easy Veggie Gravy

  • 8 mushrooms, chopped finely
  • 2 cups water
  • 1/2 cup red wine (any dry variety e.g. shiraz, merlot, cabernet sauvignon)
  • 1 vegetable bouillon cube
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 2 tablespoons flour
  • salt
  • pepper

Recipe

  • 1 place all the chopped mushrooms in a pot with a teaspoon of water, cover and cook on a low heat until the mushrooms have released all their juices (~5 minutes).
  • 2 add 1.5 cups of water, warm it up to almost boiling and dissolve the vegetable bouillon cube in the mixture.
  • 3 add and mix in the red wine.
  • 4 add all the herbs.
  • 5 mix the flour and remaining water in a small cup until all the lumps are gone.
  • 6 slowly add the flour mixture into the gravy while stirring vigorously to prevent clumping, until the gravy has reached your desired thickness.
  • 7 add salt and pepper to taste.
  • 8 serve over just about anything including potatoes, veggie burgers, veggie meatloaf etc.

Buffalo Chicken Sandwiches

Jack-o'-lantern Cheeseburger Pie

  • 1 cook first 5 ingredients in a large skillet over medium-high heat, stirring until beef crumbles and is no longer pink; drain. stir in ketchup and worcestershire sauce; cool.
  • 2 unfold 1 piecrust, and place on a lightly greased baking sheet. spread mustard evenly over crust. stir together meat mixture and 2 cups cheese; spoon onto center of crust, leaving a 2-inch border.
  • 3 unfold remaining piecrust, and cut out a jack-o'-lantern face, reserving pastry cutouts to use as a stem. place crust over meat mixture; crimp edges of crust, and fold under. place stem on top of jack-o'-lantern face.
  • 4 whisk together 2 tablespoons water, egg, and 1 drop each of red and yellow food coloring; brush over crust.
  • 5 bake at 425*f (220*c) for 20 minutes; remove from oven, and brush again with egg mixture. fill eyes, nose, and mouth with remaining 1 cup cheese. bake 5 to 10 more minutes or until golden brown.

Easy Castle Sllider Knockoff

  • 1/2 lb ground beef
  • 1/2 teaspoon salt and pepper
  • 4 tablespoons butter
  • 1 cup diced onion
  • 6 dill pickle slices (hamburger chips)
  • 6 square dinner rolls
  • 2 sheets parchment paper
  • 6 slices velveeta cheese or 6 slices american cheese, squares

Recipe

  • 1 lay beef across a sheet of parchment paper. top with the second sheet of parchment paper.
  • 2 roll out beef about ¼-inch thick into 7-10 inch rectangle.
  • 3 trim meat edges and use scraps to pat into a rectangle patty.
  • 4 season meat generously with salt and pepper. cut six 3-by-3-inch patties into the square using a spatula.
  • 5 poke 5 holes in each patty with a straw in each corner and center.
  • 6 melt butter in 12 inch skillet. add diced onion, sauté for 1-2 minutes.
  • 7 turn heat to medium-low. top bed of onions with patties, 4 or more at a time, seasoning side down.
  • 8 cover and cook patties around 4 minutes, until cooked through and no longer pink.
  • 9 dampen kitchen towel and wrap 6 buns. place in microwave for 10-15 seconds to steam. add thin slice of american cheese or velveeta if desired.
  • 10 assemble burgers with 1 tablespoon of cooked onions on bun. top with pickle slice and serve with condiments as desired.
  • 11 alternatively, omit step 9 and assemble burgers with onion only. wrap each burger in plastic wrap or small storage bag. place in larger double wrapped plastic storage bags and store in freezer.
  • 12 when ready to eat, remove burger from plastic wrap, add cheese if desired and microwave for 10-15 seconds. add pickle to the burger at the end and serve with condiments as desired.

Blue Ribbon Winning Whole Barley Sandwich Bread (with Video!)

  • 1/3 cup pearl barley
  • 4 cups water
  • 3 1/2 cups whole wheat flour
  • 2 1/2 cups bread flour
  • 1/4 cup brown sugar
  • 2 1/2 teaspoons salt
  • 1/4 cup sesame seeds
  • 1 1/2 tablespoons instant yeast (saf brand)
  • 3 tablespoons gluten (bob's red mill)
  • 1 1/2 cups water (heat this up until very warm- about 105 degrees)
  • 2 tablespoons olive oil
  • 1 tablespoon molasses
  • 2 tablespoons apple cider vinegar
  • 1 -2 cup bread flour (add as much as needed to form a dough that sticks together and not to the sides of the bowl)

Recipe

  • 1 combine the whole barley and the water in a medium saucepan. simmer on medium heat for about 50 minutes until the barley is very soft- like mushy oatmeal. pre-cooked barley can be stored in the refrigerator until you are ready to bake your bread.
  • 2 hint: make at least one batch of the bread mix- i make up about 4 of these and store them in plastic containers. they will keep fresh for about a month and make bread baking go much faster.
  • 3 to make the bread mix, measure out the dry ingredients above and set aside for bread making day.
  • 4 making the bread dough:.
  • 5 combine the bread mix, the cooked barley, the water, oil, molasses and vinegar into the mixing bowl of your stand mixer (or regular mixing bowl if you are going to knead it by hand).
  • 6 mix together with a spoon to get it blended.
  • 7 now put the bowl on the mixer stand with the dough hook in place.
  • 8 knead by machine for about 12 minutes on medium, adding additional flour a little at a time until the dough sticks to itself and not the mixing bowl.
  • 9 spray a large mixing bowl or plastic container with cooking spray, add the dough (give the dough one more spray and then cover.
  • 10 let the dough rest on the counter for about 2 hours, then either refrigerate for later use or form into loafs, rolls or killer hamburger buns!
  • 11 to form two loafs, flour your work surface and remove the dough from the raising container.
  • 12 cut the dough in half. working with one half at a time, shape into a log- rolling the dough back and forth to smooth the edges as much as possible. place each dough half into a loaf pan, press it down and let it sit until doubled.
  • 13 heat your oven to 450 degrees. place the bread into the oven and turn the heat down to 400 degrees. bake for 40-50 minutes.
  • 14 i like to use an instant read thermometer- when the bread is between 195-200 degrees i know that it is time to take the bread out of the oven.
  • 15 let the bread cool and then devour!
  • 16 *note:.
  • 17 i have been working on this recipe to increase its available nutrition profile. the modifications are as follows:.
  • 18 1. for the whole wheat flour, use sprouted, dried and ground whole wheat.
  • 19 2. make the barley ahead and soak it for 12 hours before cooking in 1 teaspoon apple cider vinegar.
  • 20 3. soak the sesame seeds (they add a wonderful flavor and texture) for 12 hours prior to making the bread- add 1 teaspoon of apple cider vinegar to the soaking water.
  • 21 4. i have deleted the wheat bran as there was no useful purpose for it and there was no practical way to remove the phytic acid.
  • 22 5. add 1/2 cup sourdough starter to the dough to increase the acidity and give more rise to the dough.

  • 24 1. increase the amount of sourdough starter.
  • 25 2. decrease the amount of bread flour.

  • 4 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1/2 cup peeled and grated carrot

  • 3 cups cooked kidney beans (2 15-oz cans, drained) or 3 cups kidney beans (2 15-oz cans, drained)
  • 2 tablespoons dijon mustard
  • 2 tablespoons soy sauce
  • 2 tablespoons ketchup or 1 tablespoon tomato paste
  • 1 1/2 cups rolled oats
  • salt & fresh ground pepper

  • 1 saute onions and garlic in oil for about 5 minutes until the onions begin to soften.
  • 2 add carrots, chili powder and cumin. cook on low heat for 5 minutes. set aside.
  • 3 mash the beans in a large bowl with a potato masher or the back of a spoon, or run through a food processor.
  • 4 add the mustard, soy sauce, ketchup or tomato paste and the sauteed vegetables.

  • 1/2 teaspoon fresh ground black pepper

  • 1/4 cup low-fat sour cream
  • 1/4 teaspoon cayenne

  • 1 combine and use to baste salmon then spread on buns, thin coating.
  • 2 to make the burger mixture, thoroughly combine the burger ingredients in a medium bowl.
  • 3 divide into 4 portions, shape into patties 1/2 inch thick and 4 inches in diameter.
  • 4 heat the barbecue grill until the coals glow red with ash around the edge.
  • 5 the salmon patties are fragile, so handle them carefully; if you chill the patties on a plate in the refrigerator before putting them on the grill, they will hold together better.

  • 1 (18 ounce) jar of your favorite barbecue sauce (i love k.c. masterpiece!)

  • 1 remove all visible fat from the chicken and toss it in the crock pot.
  • 2 place the onion slices on top of the chicken.
  • 3 pour the barbecue sauce over top.
  • 4 you may not need the entire jar, just enough to cover the chicken.
  • 5 cook it on low for 8 hours or until the chicken is nice and tender.
  • 6 shred the chicken with a fork and knife; scoop the mixture onto the bottom buns and top it with the top buns.
  • 7 or, if you're like my dad, you might prefer leaving the breasts whole and eating it that way.

Hawaiian Pulled Lamb Sandwiches

  • 1 (1 1/4 ounce) packet teriyaki marinade (mccormick grill mates)
  • 1 tablespoon paprika
  • 1 teaspoon fresh ground pepper
  • 3 1/2 lbs lamb shoulder
  • 1/2 cup chicken broth
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 1 cup chili sauce
  • 1 (6 ounce) can pineapple juice
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 8 hamburger buns
  • 2 tablespoons oil
  • 1 tablespoon ginger, chopped
  • 2 teaspoons garlic, chopped

Recipe

  • 1 in small bowl, combine teriyaki mix, paprika and pepper.
  • 2 coat the lamb the with rub mixture, patting until all rub is used. set aside.
  • 3 in a bowl whisk together the chicken broth, brown sugar, soy sauce, chili sauce and pineapple juice. set aside.
  • 4 put the chopped onions and carrots in a 5-quart slow cooker.
  • 5 place the lamb on top of the carrots and onions and pour half of the pineapple juice mixture over lamb.
  • 6 reserve remainder for hawaiian sauce.
  • 7 cover and cook on low for 7 to 8 hours. the meat should fall apart easily.
  • 8 remove the roast from the slow cooker to a cutting board. using 2 forks carefully pull the meat into shreds.
  • 9 serve the lamb on rolls drizzled with the hawaiian sauce or on the side for dipping.
  • 10 hawaiian sauce:.
  • 11 in a medium pot heat the oil over medium heat.
  • 12 add garlic and ginger and saute until soft, about 2 minutes.
  • 13 add the remaining pineapple juice mixture, bring to a boil, then reduce heat and simmer for 10 minutes.
  • 14 remove from heat and set aside.

  • 1 light a grill. in a medium skillet, heat the oil. add the onion and garlic and cook over moderate heat until tender, about 4 minutes. reduce the heat to low and stir in the ketchup, chipotle, worcestershire, dry mustard and 1 tablespoon of the vinegar and cook for 1 minute, until warm. transfer to a blender and puree until smooth. scrape the barbecue sauce into a bowl.

  • 1 in a big bowl, mix the ground lamb, half the chopped garlic, half the orange zest, cumin, coriander, mustard, hot sauce, salt, and pepper.
  • 2 evenly divide meat mixture into 4 portions; form 4 large patties about 1-inch thick.
  • 3 preheat a skillet with 2 tablespoons vegetable oil over med-high heat.
  • 4 add patties to hot skillet; cook for 6 minutes.

  • 1 drain and mash the cooked potato with a fork.

  • 1 preheat the grill to high.
