Baked Veggie Fritters / Burgers (healthy)

Ingredients
- 8 fine green beans
- 3 button mushrooms
- 1/2 medium onion
- 60 g halloumi cheese
- 1 large carrot
- 4 tablespoons cornmeal
- 1 medium egg
- 3 tablespoons lemon juice
- 3 tablespoons milk
- 1 teaspoon hot chili powder
- 1 teaspoon honey
- salt & pepper (to season)
Recipe
- 1 pre-heat your oven to 180c.
- 2 chop the first four ingredients up into small cubes (as small as you can be bothered) and grate the carrot.
- 3 place in a good-sized mixing bowl along with all the remaining ingredients and mix well.
- 4 if your mixture is a little runny then add some more cornmeal to bring it together.
- 5 grease a baking tray with 1-cal spray and spoon the mixture on to form 4 good-sized patties.
- 6 bake for around 30 mins or until nicely browned, turning half-way if you wish.
- 7 serve hot or cold.
