Baked Veggie Fritters / Burgers (healthy)

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 8 fine green beans
  • 3 button mushrooms
  • 1/2 medium onion
  • 60 g halloumi cheese
  • 1 large carrot
  • 4 tablespoons cornmeal
  • 1 medium egg
  • 3 tablespoons lemon juice
  • 3 tablespoons milk
  • 1 teaspoon hot chili powder
  • 1 teaspoon honey
  • salt & pepper (to season)

Recipe

  • 1 pre-heat your oven to 180c.
  • 2 chop the first four ingredients up into small cubes (as small as you can be bothered) and grate the carrot.
  • 3 place in a good-sized mixing bowl along with all the remaining ingredients and mix well.
  • 4 if your mixture is a little runny then add some more cornmeal to bring it together.
  • 5 grease a baking tray with 1-cal spray and spoon the mixture on to form 4 good-sized patties.
  • 6 bake for around 30 mins or until nicely browned, turning half-way if you wish.
  • 7 serve hot or cold.
