Barbecued Lamb Sandwiches

Ingredients
- Servings: 4
- 1 1/2 lbs boneless lamb roast
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- 1 (18 ounce) jar barbecue sauce, your choice
- 4 hamburger buns
Recipe
- 1 heat oven to 325°f.
- 2 sprinkle lamb with salt and pepper.
- 3 heat a dutch oven for 1 minute over medium-high heat.
- 4 brown lamb on all sides, about 4 minutes per side.
- 5 add barbecue sauce to dutch oven; cover and bake 1 ½ hours until lamb is fork-tender.
- 6 transfer lamb to cutting board.
- 7 slice into thin pieces.
- 8 return to dutch oven and cook for 5 minutes over medium heat.
- 9 place rolls on serving plate.
- 10 divide lamb mixture and spoon into each roll.
- 11 serve with coleslaw, if desired.
