Hawaiian Burgers

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 2 lbs ground beef
  • 1 (15 ounce) can crushed pineapple (well drained)
  • 1 medium onion (finely chopped)
  • 8 ounces swiss cheese (shredded)
  • peach hot sauce (to taste)
  • 1/2 lb bacon
  • 8 kings hawaiian sandwich buns

Recipe

  • 1 drain the pineapple well in advance.
  • 2 combine ground beef, pineapple, onion, swiss cheese and hot sauce.
  • 3 form into patties (for best results make patty centers slightly thinner than edges).
  • 4 for best results refrigerate patties for 2 hours.
  • 5 cook bacon and burgers together (for best results grill outside).
  • 6 place bacon and burgers on hawaiian rolls and use condiments as desired.

Delicious Turkey Burgers

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • 3/4 lb ground turkey
  • 1 medium zucchini
  • 1 medium carrot
  • 2 garlic cloves
  • 3/4 teaspoon thyme
  • 3/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 egg whites

Recipe

  • 1 grate zucchini and carrot; chop garlic.
  • 2 combine turkey, zucchini, carrot, garlic, thyme, salt, pepper, and egg whites in a large bowl.
  • 3 divide into four patties.
  • 4 spray a large skillet with cooking spray and cook patties about 7 minutes on each side, or until no trace of pink remains.

Cheap Beef Stroganoff

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 1/2 cup chopped onion
  • 1 1/2 lbs hamburger
  • 1 (14 ounce) can condensed mushroom soup
  • 1 tablespoon granulated garlic
  • salt and pepper
  • 8 ounces low-fat sour cream
  • 1 cup frozen peas (optional)
  • 16 ounces pasta noodles, cooked

Recipe

  • 1 cook the noodles following the package directions and drain.
  • 2 saute the onions slightly, add hamburger and cook thoroughly.
  • 3 drain the hamburger.
  • 4 add the soup, garlic powder,salt and pepper and heat thoroughly on low heat.
  • 5 fold in sour cream and optional peas and heat for another 5 minutes.
  • 6 serve over pasta noodles and enjoy!

Claire's Not-so-sloppy Joe's

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 37
  • 3 1/4 lbs lean hamburger
  • 12 ounces v 8 juice
  • 16 ounces reduced-sodium campbell's tomato soup
  • 1 tablespoon mustard
  • 1 tablespoon brown sugar
  • 1/2 cup ketchup
  • 1 onion
  • 1 green pepper
  • 4 celery ribs
  • 3 garlic cloves
  • 1/2 teaspoon ground cayenne pepper

Recipe

  • 1 brown hamburger over medium high heat for 5 minutes.
  • 2 add diced onions, green peppers, celery and garlic.
  • 3 brown for an additional 5 minutes.
  • 4 drain.
  • 5 stir in v8, tomato soup, ketchup, mustard and brown sugar.
  • 6 season with pepper (and salt if desired) to taste.
  • 7 bring to light simmer for 30 minutes uncovered.
  • 8 ready to eat.
  • 9 placing in refrigerator overnight and reheating tends to make the flavor "pop" a bit more.

Chili

Total Time: 3 hrs 30 mins Preparation Time: 30 mins Cook Time: 3 hrs

Ingredients

  • Servings: 8
  • 5 quarts tomato juice
  • 1 large onion, chopped fine
  • 5 -6 fresh garlic cloves, chopped fine
  • 1/2 cup chili powder
  • 1/2-1 teaspoon hot pepper flakes
  • 1/3 cup cumin
  • 2 (16 ounce) cans kidney beans
  • 2 tablespoons black pepper
  • 1 tablespoon salt
  • 1/2 cup sugar
  • 3 bay leaves
  • 2 lbs hamburger
  • 2 lbs beef roast, chopped in cubes
  • 1 tablespoon cilantro
  • 1/2 cup red pepper
  • 1/4 cup green chili pepper
  • 1/2 tablespoon cayenne pepper
  • 6 ounces tomato paste
  • 1/2 cup sour cream

Recipe

  • 1 in a large pot empty the tomato juice into the pot. in the meantime, brown the hamburger, drain and set aside.
  • 2 chop the onion, green peppers and green chilie fine and add to pot. mix in the kidney beans. i can my own tomato juice rather than buying store bought with no additives--pure tomato juice.
  • 3 now add all the remaining spices. simmer for 1 hour, stirring every 15 minutes.
  • 4 after the first hour, add the hamburger and simmer 2 hours more hours stirring every 15 minutes. the longer you let this simmer, the thicker it will get.
  • 5 serve with oyster crackers or saltines. enjoy.

Beer Chili

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 1 (12 ounce) can beer, of your choice
  • 1 (46 ounce) can v8 vegetable juice
  • 1 (8 ounce) can kidney beans (mild or hot)
  • 1 (8 ounce) can chili beans (mild or hot)
  • 1 (8 ounce) can diced tomatoes
  • 1 lb ground beef (browned and drained)
  • 1 medium chopped onion
  • 1 chopped green pepper (optional or desired amount)
  • 1 (8 ounce) package chili seasoning mix (carol shelby specifically)
  • garnish with sour cream or shredded cheese or saltines or fritos corn chips

Recipe

  • 1 brown and drain 1 lb.of hamburger.
  • 2 while browning hamburger, empty v-8 juice and beer into a large stock pot, bring to a boil.
  • 3 reduce heat to a simmer; add all remaining ingredients, except chili package spices (add beef, beans, onion, green pepper, tomatoes etc.).
  • 4 open chili spice package. you will find 4 packets of different spices.
  • 5 add larger package of chili spices first and stir.
  • 6 add salt packet to taste (i usually end up adding all of this one); stir.
  • 7 add small cayenne pepper packet to taste (optional). will be extremely hot & spicy if all is added. i usually add 1/4 to 1/2 of packet).
  • 8 if you like thick chili, follow directions on package for use of masa flour to thicken.
  • 9 continue to simmer and stir. it's ready to eat when heated all the through. the longer it simmers the spicier it will get. my mom used to let it simmer for an hour or more when i was younger. if you decide to simmer longer than 20 minutes, after last ingredient is added, turn the heat down to low.
  • 10 we like to garnish with sour cream, crackers, shredded cheese and/ or fritos. i also noticed at the chili party that some people added spaghetti noodles to their chili.

Easy Weeknight Okra & Beef Gumbo

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 lb hamburger meat, browned and drained
  • 1 lb fresh okra, sliced or 1 lb frozen okra
  • 1 (16 ounce) can stewed tomatoes
  • 1 medium onion, chopped
  • 1/4 cup picante sauce
  • salt & pepper

Recipe

  • 1 combine all ingredients in a large pan.
  • 2 cook over medium heat for about 45 minutes or until thick and okra turns from bright green to dull green -- .
