- 1 clean and debone turkey thighs, removing skin and connective tissues, and cut meat into 1/2" wide strips. discard skin, bones, connective tissues, other nastiness, etc.(i repeat: this recipe is for those that have their own meat grinder, or are friendly enough with their local butcher to prepare the turkey thighs for them).
- 2 grind the meat into a medium-size bowl according to your meat grinder manufacturer instructions, finishing by grinding the eight saltines into the mix. (yes, with the meat grinder).
- 3 preheat your skillet or pan of choice on medium heat, you may want to spray some pam or equivalent (i like olive oil) in the pan to ease with cleanup.
- 4 add worcestershire sauce, steak seasoning, and onion soup mix to the bowl and knead all to combine.
- 5 form your patties as you would regular beef hamburger patties, but make them about 1/2" thick so that they cook evenly, and cook through.
- 6 fry for approx 6-8 minutes per side depending on your stove top and heat intensity.
- 7 serve and enjoy. (i served mine on toasted out of this world garlic-onion buns, out of this world garlic - onion bread machine buns. they really are.).

- 7 the ham made a kind of smoky tasting sweet and sour sauce, but it was good. i served it with rice on a busy school night and except for one teenage dweeb who eats nothing but hamburgers, they all liked it.

- 1 you will need about 2 desert spoons of apple sauce and it needs to be the kind with bits of apple in and not the smooth kind.
- 2 cut the cheese into little cubes.
- 3 in a mixer, whiz the bread to make breadcrumbs and set aside.
- 4 now, whiz the onion so they're nicely choped, and then transfer to a large mixing bowl.
- 5 then using the mixer again, mix the lamb until it’s chopped up a bit finer.
- 6 transfer the lamb to the bowl with the onion.
- 7 add half the breadcrumbs and mix together adding the egg yolk, apple sauce, a pinch of salt and some freshly ground pepper.
- 8 only mix in the rest of the breadcrumbs if the mixture looks too wet.
- 9 now carefully mix in the cheese, try not to break it up too much.
- 10 divide the mixture into 4 or 6 (depending how large you want your burgers)! with floured hands and on a floured board shape into burgers.
- 11 using a large pan, fry in a little olive oil until cooked. try not the turn too many times so they get a nice colour and are cooked through.
- 12 serve in warm toasted burger buns with salad and whatever else you fancy.

- 2 char peppers over gas flame or under broiler until blistered on all sides. enclose in a paper bag, and let stand 15 minutes.
