Enochville N.c. Hamburger Goolash

Ingredients

- 1 lb hamburger meat
- 1 1/2 lbs red potatoes
- 1 lb brown rice
- 1 (8 ounce) box jiffy corn muffin mix
- 2 eggs
- 1/3 cup milk
- 1/2 cup water
- garlic powder
- italian seasoning
- 1 (8 ounce) bottle ketchup
Recipe
- 1 start boiling your brown rice (takes about 30 min.).
- 2 clean and cut out bad spots from red potatoes and cut into chunks. (leave some skin for flavor).
- 3 boil your potatoes (about 15 min.).
- 4 mix your corn muffin mix and bake (as directed) in an 8" round.
- 5 brown you hamburger meat in pan on medium-high heat. remove some grease.
- 6 mash your potatoes and mix in hamburger meat, garlic powder and italian seasoning.
- 7 drain rice (rice is a side dish).
- 8 when your goulash is on your plate top it off with plenty of ketchup.
- 9 mix your rice and cornbread as desired.
