Enochville N.c. Hamburger Goolash

Total Time: 40 mins Preparation Time: 5 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 1 lb hamburger meat
  • 1 1/2 lbs red potatoes
  • 1 lb brown rice
  • 1 (8 ounce) box jiffy corn muffin mix
  • 2 eggs
  • 1/3 cup milk
  • 1/2 cup water
  • garlic powder
  • italian seasoning
  • 1 (8 ounce) bottle ketchup

Recipe

  • 1 start boiling your brown rice (takes about 30 min.).
  • 2 clean and cut out bad spots from red potatoes and cut into chunks. (leave some skin for flavor).
  • 3 boil your potatoes (about 15 min.).
  • 4 mix your corn muffin mix and bake (as directed) in an 8" round.
  • 5 brown you hamburger meat in pan on medium-high heat. remove some grease.
  • 6 mash your potatoes and mix in hamburger meat, garlic powder and italian seasoning.
  • 7 drain rice (rice is a side dish).
  • 8 when your goulash is on your plate top it off with plenty of ketchup.
  • 9 mix your rice and cornbread as desired.
