Chorizo Rellenos (baked Sausage Burgers With Peppers)

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 9 links chorizo sausage
  • 2 poblano peppers, seeded and minced
  • 2 cups tomato sauce, spanish style
  • 2 tablespoons cilantro, minced
  • 3 slices cheddar cheese, halved diagonally

Recipe

  • 1 preheat oven 400°.
  • 2 remove sausage from casings and shape into 6 burgers.
  • 3 place a tablespoon or so of minced pepper in center of each burger and press into meat.
  • 4 combine sauce and cilantro and spoon over burgers.
  • 5 bake uncovered, basting occasionally, for 20-25 minutes, or until completely cooked.
  • 6 place a piece of cheese on top of each burger just before serving.
