Falafel W/ Avocado Spread - Veggie Burgers W/ Guacamole

- 1 (15 ounce) can pinto beans, rinsed and drained
- 1/2 cup monterey jack cheese, shredded
- 1/4 cup baked corn tortilla chips, finely crushed
- 2 tablespoons green onions, finely chopped
- 1 tablespoon cilantro, finely chopped
- 1/8 teaspoon ground cumin
- 1 large egg
- 1 1/2 teaspoons canola oil
- 1/4 cup avocado, mashed and peeled (about 1/2 of an avocado)
- 2 tablespoons tomatoes, finely chopped
- 1 tablespoon red onion, finely chopped
- 2 tablespoons nonfat sour cream
- 1 teaspoon fresh lime juice
- 1/8 teaspoon salt
Recipe
- 1 **to prepare patties** place pinto beans in a medium bowl; partially mash with a fork.
