Asian Salmon Burgers

Ingredients

- 1 lb salmon fillet, skin removed and picked over for bones
- 1 large egg
- 1 tablespoon soy sauce or 1 tablespoon low sodium soy sauce (if you are salt-sensitive)
- 1 tablespoon minced fresh ginger
- 1/2 cup panko breadcrumbs
- 1 -2 teaspoon chopped chives
- 2 tablespoons chopped red onions
- 1 tablespoon fresh lemon juice
- sea salt, to taste
- pepper, to taste
- 1/4 cup finely chopped red onion
- 2 cloves garlic, minced
- 1 tablespoon minced fresh ginger
- 1 tablespoon fresh lemon juice
- 1/4 cup soy sauce or 1/4 cup low sodium soy sauce
- 1/2 teaspoon sugar
Recipe
- 1 to make ginger lemon sauce: add all the ingredients to the container of a food processor; pulse until mixture is smooth; set aside.
- 2 to make burgers: cut the salmon fillet into 1/2 inch cubes; set aside.
- 3 in a large bowl, combine the egg, soy sauce, and ginger using a whisk.
- 4 add in the salmon cubes, panko, chives, onion, and lemon juice; season with salt and pepper to taste.
- 5 mix, using a wooden spoon, until the ingredients are evenly distributed.
- 6 take mixture and shape into 4 flat patties.
- 7 lightly coat each patty with vegetable oil cooking spray.
- 8 grill over medium heat for about 5 minutes on each side or until done; turn carefully to prevent breaking.
- 9 serve burgers on sesame rolls and top with ginger lemon sauce.
- 10 use extra sauce for dipping if desired.
