Cajun Hamburger Soup

Ingredients

  • Servings: 12
  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 2 quarts water
  • 1 (28 ounce) can diced tomatoes, undrained
  • 3 cups shredded cabbage
  • 3 cups potatoes, peeled & diced
  • 1 (15 ounce) can great northern beans, drained
  • 1 (15 ounce) can italian tomato soup
  • 1 (4 ounce) can sliced mushrooms, undrained
  • 1 cup sliced carrot
  • 1 cup chopped green pepper
  • 1 cup chopped celery
  • 3 chicken bouillon cubes
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons cajun seasoning
  • 1 teaspoon chili powder
  • 1 teaspoon red pepper flakes
  • 1 teaspoon black pepper
  • 1 bay leaf

Recipe

  • 1 in a large soup kettle, cook beef & onion over medium heat until beef is browned.
  • 2 drain.
  • 3 add remaining ingredients & bring to a boil.
  • 4 reduce heat & simmer, covered, for 1 hour, or until vegetables are tender.
  • 5 discard bay leaf before serving.
