Elitetwig's Bacon Barley Burgers

Ingredients
- 1/2 cup pearl barley
- 2 cups chicken stock
- 200 g bacon, diced
- 1 egg, large
- 1/2 cup ritz cracker
- 1/2 cup monterey jack cheese
- 1 garlic clove, crished
- 1 onion, diced
- 1 tablespoon oil
Recipe
- 1 in a mediun saucepan bring barley and chicken broth to the boil on a high heat, then reduce to a simmer (uncovered) for 20 minutes or until barley is tender. drain excess fluids and set aside.
- 2 while the barley is cooking, in a non-stick skillet cook the bacon, onions and garlic in a little oil until golden in colour.
- 3 add bacon, onions and garlic to barley.
- 4 mix in the egg, ritz and cheese to the barley mixture. combine well.
- 5 wet hands and divide mixture into 4 and create patties.
- 6 fry patties in rest of oil approx 4 mins each side or until golden all over.
- 7 serve with anything you like. arf-o!
