Elitetwig's Bacon Barley Burgers

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 1/2 cup pearl barley
  • 2 cups chicken stock
  • 200 g bacon, diced
  • 1 egg, large
  • 1/2 cup ritz cracker
  • 1/2 cup monterey jack cheese
  • 1 garlic clove, crished
  • 1 onion, diced
  • 1 tablespoon oil

Recipe

  • 1 in a mediun saucepan bring barley and chicken broth to the boil on a high heat, then reduce to a simmer (uncovered) for 20 minutes or until barley is tender. drain excess fluids and set aside.
  • 2 while the barley is cooking, in a non-stick skillet cook the bacon, onions and garlic in a little oil until golden in colour.
  • 3 add bacon, onions and garlic to barley.
  • 4 mix in the egg, ritz and cheese to the barley mixture. combine well.
  • 5 wet hands and divide mixture into 4 and create patties.
  • 6 fry patties in rest of oil approx 4 mins each side or until golden all over.
  • 7 serve with anything you like. arf-o!
