Bean Burgers

Total Time: 35 mins Preparation Time: 25 mins Cook Time: 10 mins

Ingredients

  • Servings: 8
  • 1 large onion, finely chopped
  • 1 tablespoon extra virgin olive oil
  • 4 garlic cloves, minced
  • 1 medium carrot, shredded
  • 1 -2 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 1/2 cups quick-cooking oats
  • 2 tablespoons dijon mustard
  • 2 tablespoons soy sauce
  • 1 tablespoon ketchup
  • 1/4 teaspoon pepper

Recipe

  • 1 in a large skillet coated with cooking spray, saute onion in olive oil for 2 minutes.
  • 2 add garlic; cook for 1 minute.
  • 3 stir in the carrot, chili powder and cumin; cook 2 minutes longer or until carrot is tender.
  • 4 remove from the heat; set aside.
  • 5 in a large bowl, mash the pinto beans and black beans.
  • 6 stir in oats.
  • 7 add the mustard, soy sauce, ketchup, pepper and carrot mixture; mix well.
  • 8 shape into eight patties.
  • 9 coat grill rack with cooking spray before starting the grill. grill patties, covered, over medium heat for 4-5 minutes.
