Hamburger Barley Vegetable Soup

Ingredients

  • Servings: 8
  • 1 1/2 lbs lean ground beef
  • 6 cups water
  • 3 beef bouillon cubes or 3 teaspoons instant beef bouillon
  • 2 cups sliced carrots
  • 1 1/2 cups coarsely chopped onions
  • 1 1/2 cups coarsely chopped celery
  • 1/4 cup ketchup
  • 1/2 cup coarsely chopped green pepper
  • 1/2 cup barley
  • 1/2 teaspoon basil
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 bay leaves
  • 1/4 cup parsley (optional)
  • 28 ounces tomatoes
  • 8 ounces tomato sauce

Recipe

  • 1 brown ground beef, drain fat.
  • 2 add rest of ingredients, bring to boil and simmer one hour or until barley and vegetables are tender.
