Cheeseburger Dip

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 12
  • 1/2 lb sharp cheddar cheese
  • 1/2 lb mild cheddar cheese (use block cheese from the deli, not slices or shredded) or 1/2 lb american cheese (use block cheese from the deli, not slices or shredded)
  • 2 teaspoons cornstarch
  • 1 tablespoon vegetable oil
  • 1 lb ground beef
  • kosher salt
  • fresh ground black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon red pepper flakes
  • 1 (10 ounce) can rotel tomatoes & chilies
  • 5 ounces evaporated milk
  • 1 teaspoon frank's hot sauce (optional)

Recipe

  • 1 cut cheeses into 1/2" cubes. toss with cornstarch and set aside.
  • 2 heat oil in a skillet over medium-high heat until shimmering. add ground beef; saute, breaking up with a wooden spoon, until no longer pink, about 5 minutes. season with salt, pepper, cumin and red pepper flakes. stir until fragrant, about 30 seconds.
  • 3 add tomatoes and milk. bring to a boil, reduce to low and add cheese cubes. stir constantly with a wooden spoon until cheese is melted and sauce is smooth. stir in hot sauce, if using. serve with crackers, vegetables and tortilla chips.
