Cheeseburger Dip

Ingredients

- 1/2 lb sharp cheddar cheese
- 1/2 lb mild cheddar cheese (use block cheese from the deli, not slices or shredded) or 1/2 lb american cheese (use block cheese from the deli, not slices or shredded)
- 2 teaspoons cornstarch
- 1 tablespoon vegetable oil
- 1 lb ground beef
- kosher salt
- fresh ground black pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon red pepper flakes
- 1 (10 ounce) can rotel tomatoes & chilies
- 5 ounces evaporated milk
- 1 teaspoon frank's hot sauce (optional)
Recipe
- 1 cut cheeses into 1/2" cubes. toss with cornstarch and set aside.
- 2 heat oil in a skillet over medium-high heat until shimmering. add ground beef; saute, breaking up with a wooden spoon, until no longer pink, about 5 minutes. season with salt, pepper, cumin and red pepper flakes. stir until fragrant, about 30 seconds.
- 3 add tomatoes and milk. bring to a boil, reduce to low and add cheese cubes. stir constantly with a wooden spoon until cheese is melted and sauce is smooth. stir in hot sauce, if using. serve with crackers, vegetables and tortilla chips.
