Greek Style Quinoa " Burgers "

Ingredients

  • Servings: 4
  • 1/2 cup quinoa, rinsed
  • 1 medium carrot
  • 6 scallions
  • 1 (15 ounce) can cannellini beans
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1 teaspoon cumin
  • salt & pepper
  • 2 tablespoons olive oil
  • 1/2 cup plain yogurt
  • 1 tablespoon lemon juice
  • 4 pita breads
  • 1/2 english cucumber

Recipe

  • 1 bring 3/4 cup water to boil; add quinoa, cover, and reduce heat to low. cook until liquid is absorbed, 12-14 minutes.
  • 2 in processor, pulse carrot, half the scallions, beans, quinoa, crumbs, egg & spices.
  • 3 form into patties and cook until browned.
  • 4 combine remaining ingredients and serve on pita.
