Greek Style Quinoa " Burgers "

Ingredients
- Servings: 4
- 1/2 cup quinoa, rinsed
- 1 medium carrot
- 6 scallions
- 1 (15 ounce) can cannellini beans
- 1/4 cup breadcrumbs
- 1 egg
- 1 teaspoon cumin
- salt & pepper
- 2 tablespoons olive oil
- 1/2 cup plain yogurt
- 1 tablespoon lemon juice
- 4 pita breads
- 1/2 english cucumber
Recipe
- 1 bring 3/4 cup water to boil; add quinoa, cover, and reduce heat to low. cook until liquid is absorbed, 12-14 minutes.
- 2 in processor, pulse carrot, half the scallions, beans, quinoa, crumbs, egg & spices.
- 3 form into patties and cook until browned.
- 4 combine remaining ingredients and serve on pita.
