Airy Hamburger Buns

Total Time: 1 hr 20 mins Preparation Time: 55 mins Cook Time: 25 mins

Ingredients

  • 4 cups warm water (about 110)
  • 1/3 cup maple syrup or 1/3 cup honey
  • 1/4 cup vinegar
  • 1/2 cup oil
  • 1/4 cup gluten
  • 8 cups freshly ground whole wheat flour (more added later)
  • 3 tablespoons instant yeast (saf or other brand)
  • 1 tablespoon salt

Recipe

  • 1 mix the first 7 ingredients on speed 1 until moistened.
  • 2 cover and let rise until it reaches the top of the bowl.
  • 3 add 1 t salt.
  • 4 add enough flour until the dough pulls away from the side of the bowl. i usually add about 2 more cups.
  • 5 knead on speed 1 for 5 minutes.
  • 6 form large balls - 6-9 per cookie sheet. use parchment paper. let rise 45 minutes.
  • 7 bake for 25 minutes at 400° until golden brown.
  • 8 brush with butter while still hot. use for hamburgers, sloppy joes, anything you would use a bun for. or eat it with butter!
