Airy Hamburger Buns

Ingredients
- 4 cups warm water (about 110)
- 1/3 cup maple syrup or 1/3 cup honey
- 1/4 cup vinegar
- 1/2 cup oil
- 1/4 cup gluten
- 8 cups freshly ground whole wheat flour (more added later)
- 3 tablespoons instant yeast (saf or other brand)
- 1 tablespoon salt
Recipe
- 1 mix the first 7 ingredients on speed 1 until moistened.
- 2 cover and let rise until it reaches the top of the bowl.
- 3 add 1 t salt.
- 4 add enough flour until the dough pulls away from the side of the bowl. i usually add about 2 more cups.
- 5 knead on speed 1 for 5 minutes.
- 6 form large balls - 6-9 per cookie sheet. use parchment paper. let rise 45 minutes.
- 7 bake for 25 minutes at 400° until golden brown.
- 8 brush with butter while still hot. use for hamburgers, sloppy joes, anything you would use a bun for. or eat it with butter!
