Easy & Delicious Vegan Pitas

Ingredients
- 2 pocketed pita bread ( or wheat)
- 1 cup of mild chunky salsa
- 2 cups spinach
- 2 soy burgers (boca meatless patties original vegan)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Recipe
- 1 in a medium skillet, lightly spray cooking spray.
- 2 heat skillet to medium heat and add boca patties. then, sprinkle lightly with salt and pepper.
- 3 when patties have started to warm up, crush into smaller pieces (looking similar to ground beef) with spatula and let cook, slightly browning.
- 4 add salsa and let cook for about a minute, constantly stirring.
- 5 turn off burner and let cool.
- 6 cut or pull apart the pocketed pitas (each full pita will pull into 2 pieces). (optional - put pita pieces into toaster and slightly brown.)
- 7 evenly fill pitas with spinach, and meat/salsa mix, and/or any other veges you might wish to include.
