Easy & Delicious Vegan Pitas

Total Time: 6 mins Preparation Time: 1 min Cook Time: 5 mins

Ingredients

  • 2 pocketed pita bread ( or wheat)
  • 1 cup of mild chunky salsa
  • 2 cups spinach
  • 2 soy burgers (boca meatless patties original vegan)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 in a medium skillet, lightly spray cooking spray.
  • 2 heat skillet to medium heat and add boca patties. then, sprinkle lightly with salt and pepper.
  • 3 when patties have started to warm up, crush into smaller pieces (looking similar to ground beef) with spatula and let cook, slightly browning.
  • 4 add salsa and let cook for about a minute, constantly stirring.
  • 5 turn off burner and let cool.
  • 6 cut or pull apart the pocketed pitas (each full pita will pull into 2 pieces). (optional - put pita pieces into toaster and slightly brown.)
  • 7 evenly fill pitas with spinach, and meat/salsa mix, and/or any other veges you might wish to include.
