Grilled Falafels

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 (19 ounce) can no sodium chickpeas, drained and rinsed
  • 1/3 cup red onion, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 garlic clove, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons pepper
  • 1 egg
  • 1/2 cup cooked quinoa, cooled
  • 1/4 cup oats

Recipe

  • 1 cook and cool quinoa.
  • 2 pulse all ingredients in a food processor until fairly smooth.
  • 3 shape into 4-6 patties. cover and refrigerate for 1 hour or until needed.
  • 4 preheat grill to medium high. spray grill with spray and cook for 8-10 minutes, flipping once.
