Buffalo Cheeseburger Soup

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 tablespoon oil
  • 1 lb ground buffalo meat or 1 lb ground beef
  • 1 cup diced onion
  • 1 cup diced celery
  • 2 tablespoons sun-dried tomatoes packed in oil, diced
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 3 cups chicken broth
  • 1/2 cup sour cream
  • 8 ounces cubed american cheese

Recipe

  • 1 brown the meat, onion, celery and tomatoes in the oil over medium heat until meat is cooked through and veggies are pretty tender.
  • 2 add seasonings and broth.
  • 3 stir in sour cream and cheese, reduce heat to low and allow cheese to melt.
  • 4 do not let the soup boil after the dairy has been added.
