Buffalo Cheeseburger Soup

Ingredients
- Servings: 4
- 1 tablespoon oil
- 1 lb ground buffalo meat or 1 lb ground beef
- 1 cup diced onion
- 1 cup diced celery
- 2 tablespoons sun-dried tomatoes packed in oil, diced
- 1 teaspoon dried basil
- 1 teaspoon salt
- 3 cups chicken broth
- 1/2 cup sour cream
- 8 ounces cubed american cheese
Recipe
- 1 brown the meat, onion, celery and tomatoes in the oil over medium heat until meat is cooked through and veggies are pretty tender.
- 2 add seasonings and broth.
- 3 stir in sour cream and cheese, reduce heat to low and allow cheese to melt.
- 4 do not let the soup boil after the dairy has been added.
