Ingredients

• 1 (22 1/3 ounce) package sugar cookie mix
• 2 eggs
• 1/3 cup vegetable oil
• 1 teaspoon water
• 1 (10 ounce) package peanut butter chips or 1 (10 ounce) package butterscotch chips
• 3/4 cup flaked coconut
• 5 -6 drops green food coloring
• 1/2 cup butter or 1/2 cup margarine, softened
• 2 2/3 cups powdered sugar
• 1/2 cup baking cocoa
• 1/4 cup milk
• 1 teaspoon vanilla extract

Recipe

• 1 combine cookie mix, eggs, oil, and water; mix well.
• 2 stir in peanut butter or butterscotch chips.
• 3 shape into 1-1/4 inch balls; place 2 inches apart on an ungreased baking sheet.
• 4 bake at 375 degrees fahrenheit for 9 to 11 minutes or until lightly browned.
• 5 remove to wire racks to cool.
• 6 for topping, mix together coconut and food coloring in a plastic "ziplock"-type baggie; knead through baggie until until all coconut is green.
• 7 for filling, mix together all filling ingredients in a mixing bowl; beat until smooth.
• 8 frost the bottoms of 1/2 of the cookies; sprinkle with colored coconut.
• 9 top with remaining cookies and gently squeeze together.
